(She Said) About 5 years ago, my doctor recommended that I follow a gluten free diet after being diagnosed with Hashimoto’s Disease. Hashimoto’s is an autoimmune disease that can destroy the thyroid. Gluten mimics thyroid hormones, and ingesting gluten when you have Hashimoto’s disease will increase the body’s attack on the thyroid because it thinks that the body is producing too much thyroid hormones.
Finding out that I should go gluten free was devastating for me because I am an avid baker, and run a small cake and cupcake bakery business. Being gluten free meant that I could no longer eat traditional flour, and would have to give up all of the sweet treats I create in my bakery.

My gluten-loving husband can’t even tell the difference when I use this flour over traditional flour, and my bakery customers have agreed. Another thing that I love about this gluten free flour blend is that it already has Xanthan Gum in it so you do not need to add it to your gluten free recipes. Xanthan Gum is used in gluten free recipes with gluten free flour because it helps create the binding nature of the gluten without using gluten itself.

(He Said) I can eat all the gluten I want! Being supportive to my wife’s needs I have given up having on some things being the traditional gluten recipe. After watching my wife struggle to find a recipe to make gluten free cupcakes I’m happy to say that I really can’t tell the difference with this recipe she came up with.
